Foodie Friday Fries Cuatro Quesos Dos Fritos

My brother came to visit this week and he is a big Psych fan.  (USA Network series)  When family from out of town comes, all the family try to get together for a meal.  We decided a Psych theme BBQ would be a fun option.  Realistically, the only way our BBQ was connected to the television show was by serving pineapple and making the elusive appetizer, Fries Cuatro Quesos Dos Fritos- Twice fried, four cheese stuffed potatoes.

My daughter and I worked on how to make these odd starchy treats.  We found this helpful video on Youtube.

Then we set out to try it ourselves.

Using smaller, but not too small, red potatoes, we peeled and then fried them in canola oil.  After they drained a cooled a bit, we sliced the tops off and scooped out a good portion of the middle.  You need to leave enough of an edge to hold the cheese without breaking apart.

Put the cap back on and dip in beer batter.  Believe it or not, the top will stay on enough to fry.  Fry until they are golden.  The video is pretty helpful.  If, after the first fry, the potatoes don’t get cooked enough to scoop out, microwave in one minute increments until they are just soft enough to scoop but not so soft they fall apart.

One other tip- You can do this in stages and hold them in the fridge until you want to fry.  We fried the potatoes one day and scooped them the next.  Once we stuffed them with the cheese, we wrapped them and held them in the fridge for two to three days and fried as we wanted to eat them.  The beer batter will also hold in the fridge for a couple of days.
