Motivate Me Monday Jell-o Fruit

I love Jell-o.  Whenever we have a family get-together, my family expects me to make something out of Jell-o.  They have a right to expect it after twenty years of doing it.

For our 4th of July get-together with our friends, I made one of my favorites.  Fake fruit.  It’s pretty simple, but a little labor intensive.

Cut lemons, limes and oranges in half, scoop out the fruit and rinse them out.

Make the Jell-o with only half the water.  I use 1 cup of boiling water to dissolve the Jell-o and then 1 cup of ice so the Jell-o sets up very quickly.  I do let the fruit sit on the counter a bit before I put them in the fridge so I don’t slosh them around.

Fill the shells as full as you can.  When the Jell-o hardens, it sinks in a bit.

Everyone gets a kick out of these fruits.  I am sure I did not come up with this on my own.  I must have seen the idea somewhere.  Have you ever made these, or seen this idea somewhere?  I would love to know.
